You "extend the expiration date" by renewing the cert, which should be done every 60 days or so, and should be done automatically. If it isn't (and it hasn't since January of this year for that hostname--before that it was issuing new certs every three days in a gross abuse of the Let's Encrypt service), perhaps whatever resources cPanel has can tell you why that product isn't working properly.
Yes, it's called "renewing" and as I said, how to do that is related to how you got the certificate in the first place. Instead of using the command line or hit a button to "get a certificate" you'd use a command line or button to "renew the certificate". But as you haven't told us how you got the certificate in the first place, we cannot give you any advice on how to renew
