I am using a Synology DS918+ NAS and recently updated the DSM to 7.0.1. I saw notes beforehand advising that when upgrading to Version 7 from Version 6 the Quick Connect now uses an SSL certificate for security. The notes also advise that I must pass my Quick Connect domain to Let's Encrypt. How do I do this?

That does not sound right. Can you point us to the docs that say that? I think there is a misunderstanding.
Your NAS should have a way to request a cert from Let's Encrypt. If you haven't yet you should review this:
