I'm not sure if it's my domain, the --standalone seems to respond just fine when I try connect (edit: was able to get a cert from BuyPass just fine).

The problem is not on your configuration, there is a problem actually on lets encrypt production API, you can see the message on the banner of the website,
acme-v02.api.letsencrypt.org (Production) Service Disruption
be patient, maybe by tomorrow it will be OK.
