I am not sure about the purpose of the archive directory created by certbot. Does it simply contains previous versions of certificates? If yes, is there a possibility to have more than one?

It also contains the current ones.
How do you mean to have more than one archive directory? Isn't one more than enough?
Thank you for the answer! I meant more certificates in the archive, e.g. the current one and the two previous ones.
Certbot was changed starting version 2.3 to only keep 6 certs in /archive (latest and 5 more).
Not sure why you would be seeing only two. If you need older certs than 6 you could just make backups. The Certbot --deploy-hook could be used to copy each new cert to your own history location. See Changelog here: certbot/certbot/CHANGELOG.md at master · certbot/certbot · GitHub
