After an entire day of reading and researching, I wrote a guide on using an LE SSL Cert on Postfix and Dovecot and hope this helps others out. It works like a charm.

Just one comment - it’s maybe worth updating the git clone stuff from letsencrypt to certbot ( the official client changed it’s name a few weeks ago )

Tutorial Fully Updated Now using the git clone of certbot, all responses one will receive and command lines one should issue are all up to date now.
Also wrote a quick how to for Ubuntu users on how to update / switch to Certbot.
