The official docs URL is https://certbot.eff.org/docs/. If there are remaining links to the old location, they should be updated.

A redirect was in place: [documentation] https://letsencrypt.readthedocs.io should redirects to https://certbot.eff.org/docs/ · Issue #6444 · certbot/certbot · GitHub but now is gone.

Yes there are still links (even in that github project!), and yes they should be updated. But it's never possible to update all links, especially the ones on other websites and on forums, so a redirect should be kept at least a few years considering the size of the project.
