I had LetsEncrypt installed before, I changed my hostname and some DNS and I tried to uninstall and reinstall LetsEncrypt and now when I go to WHM > Plugins > Let’s Encrypt SSL I see the following error message and nothing else:

Error loading config: rpc error: code = 14 desc = grpc: RPC failed fast due to transport failure

Anyone know how I can repair this error and get Let’s Encrypt plug working again in WHM and cPanel?
PS = I already tried the uninstall and reinstall commands and that did not work.

There may be more to a clean uninstall - I leave that to the WHM experts…

In the meantime I would
uninstall
remove any lingering letsencrypt folders
then reinstall

As mentioned, I already did that. Several times with no success.
cPanel/WHM referred me to contact Let’sEncrypt about this.

I did not read where you manually deleted any folders...
Nor if you checked to see if any even remained after the uninstall.
So that is why I suggested that you

immediately after the uninstall.

But if you have already tried that, then I am out of suggestions.
and as I said in my first line:

Be they with cPanel/WHM or members of this community.

I can't imagine that changing the hostname and some DNS can cause irreparable damage.
