This is still the original file reference (notice the 0001). You should change that too to the actual existing file.

The temporary fix seems to have worked

I stupidly after 8hrs reading and staring at the screen left the -0001 in the path to the file and of course that didn't exist. Pointed it correctly and seems to be up again AND the SSL is functioning.

So my concern is now in 60-90 days when I have to do this all over again.

Yes, using the standalone when you already have a webserver running isn't the ideal authenticator plugin. You might try running certbot renew --dry-run --apache --cert-name pulsenews.online and see if that would succesfully test renewing your cert.
