My domain is:

I ran this command:
-d lallybroch.com.au -d www.lallybroch.com.au

It produced this output:
A SAN with *.lallybroch.com.au and lallybroch.com.au

How do I get the SAN to not have an asterisk and have www.lallybroch.com.au

You sure that wildcard certificate is from Let’s Encrypt? Because if we check all your issued certificates for example with crt.sh (https://crt.sh/?q=lallybroch.com.au), the only wildcard cert I can see there is issued by Cloudflare.

Please check certbot certificates for the actual certificates stored on your server issued by certbot.
