Do we have CAIQ documentation available for Let's Encrypt TLS certificate solution?

No, not at this time. Many of the CCM's controls could be mapped to WebTrust, for which Let's Encrypt does make audit reports available: Policy and Legal Repository - Let's Encrypt

It's important to point out that Let's Encrypt does not in any way receive, store, or process the data within TLS sessions, so often falls outside the definition of a service provider from whom you would need compliance information.
