Hey, I am taking over a certificate authority roll out and I believe management would like to go the Lets encrypt route but I am having trouble finding Documentation on how to implement it into an environment.
Anyone have any training links or paths for me to read up on?

I recommend starting with the Let's Encrypt documentation:

You can't get an LE cert that will be able to issue certs.
