Ok, I worked this out. It turns out my fullchain.pem needed to be split between the certificate and chain fields in my load balancer. I thought it'd send it all and just work but clearly not.

The certificate is not trusted in all web browsers. You may need to install an Intermediate/chain certificate to link it to a trusted root certificate
