I noticed that https://letsencrypt.status.io/ still lists the OCSP responder urls as “Operational” despite them not being available. Will this be updated to reflect the fact that OCSP responders are offline now?

and if it show something not replying as Operational, what is that status page actually monitoring?

The status page monitors whether any alerts are firing for that service. We've deleted the monitoring and alerts, so no alerts are firing 
We'll remove it from the status page soon, but in the mean time rest assured: the green status means it's functioning exactly how we want it to!
