I checked the certbot documentation, but it looks like there is no parameter override to specify a value other than 30 for the default renewal age override. The only way this seems possible is to manually edit the domain.conf renewal files and uncomment the # renew_before_expiry = 30 value. Any ideas?

Yes this is the one you uncomment to change the default value of 30, mine is set to 7.

I think it may also be possible to make that expiry setting global (for all certs) within the cli.ini file.
