I stupidly deleted myself from the mailing list for Domain renewal notifications. Is there any chance that my email can be added again to mailchimp with the domains that I have reminders for.

The exact same email address can't be added back.
But you might be able to use "Plus Addressing" to make it seem like a new email address and still receive it.
Like:
Your email address: me@example.com
"New" email address: me+too@example.com
That said, you would have to add/update that new email address on your next renewal(s).
