Yes. I use that hook. I just have the dovecot and postfix running on a different machine from my DNS server where I handle all this certbot stuff, and I wasn't doing the remote restart properly of the email servers
Aah, running the software pieces on different servers does complicate things a little bit indeed. But should be possible 
Also, both Postfix and Dovecot have a reload command in stead of a hard restart. Reloading does the trick of loading the new certs too and doesn't lead to any disconnected users or downtime.
Yes. I have a sophisticated restart system already in place for those servers. It works fine when run on that server. My restart that was initiated from the DNS server just didn't do the ssh correctly.
