How do you create letsencypt certificate for use with Nextcloud docker container, for use with Sophos XG Web application firewall

Hi. I want to use Nextcloud docker container on my Unraid NAS. Since I have Sophos XG Firewall, I want to use WAF (Web Application Firewall) to protect access to Nextcloud. I'd also like to use letsencrypt to make it secure. How do I get letsencrypt cert if the "server" is actually a docker container?

Hope this makes sense, and someone can help.
