Let’s encrypt will only issue certificates with basic information (only include the domains) what so called DV certificate.

If you are trying to request a certificate that include ownership information, which including but not limited to: OU (organization unit), O (organization)… Use other commercial CA else than let’s encrypt (and possibly pay at least $20 for a OV certificate) as let’s encrypt currently does not and will not support issue OV / EV certificates.
