So the solution will be to install linux mint and docker inside it...
There are many possible solutions, and I expect that would be one of them--a bit over-complex for my taste, but that's not necessarily wrong.

I feel more conformtable with ubuntu/Mint than freenas, so I'm going that way
Just to give an end to this topic:
The fact is that with truenas 13 it's like impossibile to solve the HTTP challenge with caged instance, and the nextcloud plugin has a specific issue.
So I went with debian 11 and all went (almost) nice and smoothly
