Any update on the CAA “validationmethods” for production? I see RFC6844bis in https://www.rfc-editor.org/current_queue.php is still in EDIT state, does that mean it’s not live yet?

That's correct, it's not yet finalized. You can see the state transitions in this blindingly awful .gif.
It will need to go into AUTH48 based on the RFC editor's feedback, after the authors return it to the RFC editor it will progress to the final stages. Based on how long this took for RFC 8555 (my only experience to draw from) I expect this will be ~a month or so end to end.
After that happens I believe there will need to be a CABF ballot to reference the bis version of the document from the BRs.
