I have created on Filemaker a database for my use only but I need to be able to access it remotely, Filmaker allows remote access but for added security requires a SSL cert. Can someone please give me some guildance. I am very, very new to this.
The operating system my web server runs on is (include version): mac OS Mojave 10.14.6

you need a domain name to create a certificate.
Start with some basics:
Then select a client.
If you use dns-01 validation and something like --manual to create the required dns TXT entry, you should be able to create a certificate (without a webserver).
But you have to do that every 60 - 85 days.
Isn't it possible to use a self signed certificate? Maybe easier.
If you're the only user of this service, a self-signed certificate could be much more appropriate. You'll receive a browser warning the first time you connect, and you can tell the browser that the certificate is correct and then not see the warning in the future.
