I’ve found multiple topics on using underscore on fqdn record but it’s not clear for me.
Why continue to use underscore for txt record acme challenge ? Is it possible to change the default challenge by another one ? And not using any special char at the beginning of the record ?

Specifically,
Because a "host" domain name is not allowed to use the underscore character, this distinguishes the name from all legal host names
Expanding on @_az's answer (Thanks!): It is not possible to change any aspect of the DNS-01 challenge. The structure of the challenge and TXT record are specified as-is by the ACME protocol.
@_az is evidently an underscore expert.
