I have a domain which used to have a certificate from Let’s Encrypt but now it’s another vendor.
However, I’m still receiving the standard certificate renewal email. How do I unconfigure that for just this domain?

You can’t do that for a single domain with the current setup.
If you still want other reminders from Let’s Encrypt, just ignore the renewal reminders and they’ll stop after the old certificate would have expired.
