Yes I needed four names on the certificate.

Solution was

certbot --nginx --agree-tos --redirect --staple-ocsp -d shesheds.co.nz -d www.shesheds.co.nz -d nextcloud.shesheds.co.nz -d www.nextcloud.shesheds.co.nz --email info@shesheds.co.nz
