I have multiple sites with different domains on my apache server on ubuntu 20.04,
I would like to know how to configure an SSL at the server level and not one domain after another.
Is that possible with certbot?
I'm afraid I don't understand this part of your post. SSL is always configured at the server level. You can get a single certificate for all domains or get multiple certificates with a separate certificate for the separate domains.
Could you please elaborate on your question above?

I was aking for help because I have multiple sites on apache and have to configure on all of them.
How can you best advise to redirect all from http to https at a go?
without having to do it one by one?

Certbot can insert a redirect when the --apache installer plugin is used.
