I don’t remember why I decided to delete an active SSL cert, perhaps I wanted to issue a new one to start fresh (I did issue a new one). Wouldn’t have thought it would completely break my site and now I can’t access it. I wonder, how can I now restore access to my Wordpress website with as less pain as possible?

Obtained cert via installing plugin "really simple SSL"
Right now error message is "can't find IP address" (I also changed nameservers in hope that it would solve the SSL issue, perhaps misconfigured it) but initially was 403 error, page unaccessible and gave me "back to safety" error
Not sure about shell access
In this case, i felt like the best way for you to resolve the certificate issue is to contact HostGator support (probably live chat).

Please also try to restore your nameserver and IP back to the normal (regular) situation.
