Is there a way to test if the expiration e-mails are working correctly?

I did not find a command/option in certbot.

Unfortunately there is no test option at this time, though it is a reasonable suggestion for a possible future feature.

Not a fast one, but the staging environment sends the expiration emails too. You'll have to wait 70 days to receive one.
