If you are talking about records for DNS-01 challenge then keeping those around donʼt pose any security risks AFAIK. And they should be removed after successful certificate issuance anyway.
You can put anything in TXT records if you encode it right. You could put an encrypted message there and someone with the right key could decrypt it.
That’s the generic answer for a generic question.
