Delete all certificates and start over

My system is a mess. The HTTP -> HTTPS redirection is not working.
certbot-auto certificates shows that some of my certificates are for several domains which is not what I intended.
My preference would be to fix the problems one at a time, but I do not have the mental bandwidth. I need to get this done.
So what is the best way to start over?
I can make a HTTP:80 configuration for my sites. Then I should delete some files. Which ones? Then run certbot-auto and install certificates.
Is that sensible?
