So should I wait 7 days before I try again or can I use one of the certificates?

You have issued several certificates but I can't be sure they are saved in your server. I don't use Plesk so I know nothing about how it works or manages the conf and issued certs so I think the best you can do is explain the problem to your hosting provider and they should be able to check and solve the issue or guide you to use the right process for your environment.
