If your docker container is ephemeral (temporary), you really want to create your certificates outside of the docker container so that you're not continually creating and deleting certificates, resulting in getting rate limited by Let's Encrypt.
If we knew all the subdomains you need, we could just try something like this...
sudo certbot --cert-name sprigsys.com --nginx -d "sprigsys.com,www.sprigsys.com,slmg.sprigsys.com" --keep
