The software running on your host uses the ACME protocol. A protocol is just an agreed way of communicating, it doesn't "run on" your host, it's just the specification of how the software works.

So, yes I agree, it could be better written/read as an "and":
"software that uses the ACME protocol and which typically runs on your web host."

by means of an ACME client in my local computer.

You can do that. Just remember to renew in 60 days.

Nope. It's always 90 days of validity with renewal recommended at 60 days.
